Easy Vanilla Muffins

COOK TIME: 30 Minutes DIFFICULTY: Easy SERVINGS: 12 Muffins Metric | US


  • 2 Eggs (Make sure they're not too cold
  • 75ml of Sunflower Oil
  • 1/3 a cup of Sunflower Oil
  • 130 grams of Sugar
  • 1/2 cup of Sugar
  • 190 grams of Flour
  • 1 1/2 a cup of Flour
  • 1 Pack of Baking Powder
  • 1 Pack of Vanilla Sugar (Or Alternatives)
Start off by preheating your oven to 180˚C350˚F or Gas Mark 4. After that place your cupcake cases into a cupcake tintray.
Crack the eggs into a large bowl and add the sugar. Stir until it's mixed well and the colour has lightened a bit. Then add the oil and stir again.
Now it's time to add the dry ingredients. Add flour, baking powder and vanilla sugar and stir until it has gotten a doughy-like consistency. It may look like there isn't enough for 12 muffins but don't worry, they'll get fluffy. Grab an ice cream scoop or a regular tablespoon and add 1 tbsp. of the mixture to each of the cupcake cases.
Pop them in the oven for about 20-25 minutes and they'll be done but don't bake them too much if you don't want them to dry out and harden. Even I can bake these so it's an easy recipe for sure. You can eat them with Nutella® if you want like I do or choose whipped cream instead. Hope you like them, enjoy!
